I added an exclamation point to this one because that's just how excited I was to make these. Let me just say that I absolutely love churros! Especially when they're right out of the oil, the hot crispy outside with the sweetness of the cinnamon sugar and the chewy inside is absolute perfection.
Not to sound stereotypical, but as a Mexican-American, I grew up with getting churros all the time at markets, from my dad brining some home for me an my siblings, and from my mom making some at home. They're a sweet treat, but to me they can also definitely be categorized as a comfort food. Or would it be a comfort dessert?
The point is that I love churros. But while I was excited to make these I was also honestly a little worried. To make churros, one doesn't necessarily have to make the kind that are fried in oil, but I've always found that the ones made this way tasted the best. That being said, working with hot oil is dangerous and I'm a big scaredy cat, even taking things in and out of the oven kinda freaks me out. It's a bit embarrassing, but for the churros, I had my mom on standby to make sure I didn't absolutely mess up and burn myself with the oil.
Churros surprisingly have a lot going on to make them.
And instead of an oven this time, you're going to want to put enough oil in a pan and turn on the stove top but please do this with caution.
The churro dough:
1 cup water
6 tbsp butter
2tbsp granulated sugar
1 tbsp all purpose flour
1 tsp salt
2 large eggs
You're going to want to beat these all together. You can use a whisk, but honestly that'll probably take forever, so using a hand mixer is much more convenient.
Once you've made your dough, you can put your dough into a piping bag with a large star tip and grab a pair of clean kitchen scissors to help cut the churros to size before they drop in the oil. Then, simply squeeze the dough into the oil and let the churros cook until they're golden brown.
Let the churros cool down for a few minutes and then roll them in a mixture of cinnamon and sugar and then you'll have some delicious churros! You can elevate the churro-eating experience by having some chocolate dipping sauce, but honestly, the churros on their own are pretty great!
