Cute Mini Cakes

I'll admit that I'm pretty late to this trend. Anyone with social media would know that about a year or two ago when lockdown was in full swing, there were a whole bunch of foods and desserts that started going viral online and had everyone and their mothers scrambling to make some of their own. I won't lie when I say even I tried to make that one coffee hack.


But something that really caught my attention during this time was all the cute little cakes that people were starting to make. "Lunchbox cakes" they called them, because you could put them in a small little lunchbox container to bring with you to, well, lunch. They would always be decorated so cutely, with pastel frosting and cute inscriptions on the top. People were really goin all out for them. I really wanted to hop onto the bandwagon, but it kept slipping my mind.


Until now that is!

I finally decided to make them after I saw yet another image on my instagram a a cute small little cake that not only looked beautiful, but probably tasted delicious as well.


Making them is the easy part, you just follow the instructions on the box of the cake mix, replacing the water with milk, the oil with melted butter, and using three large eggs instead of two. After that, you're going to pour the batter into a shallow baking sheet. Once the cake is out of the oven and cooled, you're going to cut off the top to make it as flat as possible and use a circle cutter to pop out the small layers of your tiny cake.


The real fun about these is the decorating, you can go crazy and decorate it however you'd like! You can go classy and simple, or you can be a maximalist and put everything under the sun on it. Eating a tiny cake is super fun too. It's really funny pretending to be fancy, cutting out small slices and eating them as if you were some fancy lady.
