Strawberry Shortcake Nino Envuelto

I wanted to make a nino envuelto as sort of a challenge to myself. A nino envuelto is what it's called in Spanish, in English, this is basically just a roll/log cake that can be notoriously difficult to make because of the fact that you have to roll it up.


Anyone who has ever seen the show the Great British Bake Off will know that doing this incorrectly or doing it at the wrong time will cause the cake to crack and spill out its content and just generally cause a mess and make the cake look unpleasant. As such, I wanted to see if I would be able to do this.


The result is something that I'm personally proud of. It's certainly not Great British Bake Off worthy, and admittedly, I used a good amount of powdered sugar to try and hide any imperfections, but it tasted great and looked okay enough, so that's what really matters!


I even went above and beyond by making the frosting myself this time, something that've I've tried and failed at a couple of times in the past.


The flavor of this cake is pretty basic, really it's just a rolled up strawberry short cake, but that flavor is a classic for a reason. The sweetness of the frosting and vanilla sponge cake, combined with the tangy strawberries is a match made in heaven!


As for the cake mix, I also bought it pre-made haha. So it's the same as for any of the other cake preps:


Pre-heat the oven to 375


In a large bowl mix together:


Vanilla sponge cake mix

1 cup of whole milk

8 tbsp of melted butter

3 large eggs


When you're finished making the mixture, you have to keep in mind that this is going to be a role cake! So instead of pouring it into a regular cake pan, you're going to have to line a baking sheet with parchment paper and then pour the mixture onto the baking sheet so that the cake ends up long an flat enough so you can roll it up later while making room for its fillings.


While the cake is in the oven, now is the perfect time to make the frosting that will fill the inside of the cake. It's really simple!


Instead of making butter cream frosting, you're going to make a lighter frosting made out of heavy whipping cream, powdered sugar, and a little bit of vanilla extract.


The measurements are as follows:


2 cups heavy whipping cream

1 cup powdered sugar

1 tsp vanilla extract


Beat them together with a hand mixer until it forms stiff peaks, but a word of warning: Make sure to pour the powdered sugar in slowly, or else you'll end up with a puff of powdered sugar everywhere.


By the time you're done with this, chances are, your cake is done baking! Make sure you let it cool down just enough that the frosting won't melt off of it, but not so cool that it's not shapable.


Spread the frosting in a thin layer and add some chopped up strawberries as well and slowly begin rolling it up. Top the cake off with some more powdered sugar and voila! You've made yourself a delicious nino envuelto!
